A boutique hotel in Sarasota’s Rosemary District is now under the management of Oliver Hospitality, a Nashville-based hotel and restaurant management company that plans to make some updates to the property's culinary and service offerings.
The Sarasota Modern is working with the hospitality company on “launching the hotel into its next era,” Oliver Hospitality co-founder and managing partner Ethan Orley says in a statement.
Oliver Hospitality, founded in 2009, is premised on the idea that “old and new properties alike could be reworked into engaging and thoughtful spaces,” according to its website.
The Sarasota Modern opened in 2019 and is part of the Tribute Portfolio, a collection under the Marriott International umbrella featuring independent, character-driven hotels. Located at 1290 Boulevard of the Arts, the hotel has 89 rooms with distinct layouts, from private patio suites to a 1,100-square-foot Rosemary Suite with an expansive balcony and water views.
It includes two restaurants: Wink Wink Food & Drink, inspired by tiki bars and 1950s and 1960s supper clubs, as well as Wink Wink Pool Bar, which offers poolside bites and drinks. The pool at the hotel is also accompanied by a cold plunge, hot tub, cabanas and loungers.
Oliver Hospitality is working with the hotel on renovating and rebranding Wink Wink Food & Drink, according to a statement provided to the Business Observer. It will refresh menus, improve service and ensure the “culinary offering matches the design-forward and playful spirit of the hotel.”
Plans for the hotel overall include elevating consistency, service standards and guest journey, such as arrival experiences and service touchpoints, according to the statement from Oliver Hospitality. The company also intends to source select in-room amenities from local businesses, from organic coffees to sweets, and add local event programming.
“The hotel seamlessly aligns with our brand values of community connectivity, exceptional experiences, sophisticated amenities rooted in local culture, and a central hub for locals and visitors to experience the best of Sarasota,” Orley says in a statement.

Oliver Hospitality is a “hands-on” and “holistic” management company, according to a statement provided to the Business Observer. “We aren’t looking to transform Sarasota Modern into something unrecognizable, but to come alongside this special property to elevate all touchpoints of the guest experience and make it not just a destination, but a neighborhood staple.”
