New restaurant opens at University Town Center

Just Salad is now open in The Market at University Town Center. Located at 5231 University Parkway, Suite 113, the eatery serves salads, warm bowls, wraps, market plates, soups and smoothies.

Customers can order from a menu of chef-designed dishes or build their own. Salads use a base of arugula, baby spinach, Romaine, shredded cabbage, shredded kale or supergreens blend. Then diners can select toppings, protein, cheese and dressing. Warm bowls consist of a lettuce or rice base, protein, side and dressing. Market plates include a rice or lettuce base, protein, curated sides, garnish and dressing as well.

The fast-casual brand Just Salad was founded in 2006 in New York City and has more than 100 locations across Connecticut, Florida, Illinois, Massachusetts, New Jersey, New York, Pennsylvania and Washington, D.C. In the region, Just Salad has a location in South Tampa at 3810 W. Neptune St. Additional Just Salad restaurants are coming soon to Odessa at 16120 Preserve Marketplace Blvd. and to two locations in Naples: 960 Immokalee Road, Suite 200, and 1993 Tamiami Trail N., according to the Just Salad website.

Just Salad in The Market at UTC is open daily from 10 a.m. to 9 p.m. People can order in-store or online.

Another healthy option is also coming soon nearby. Pure Green — which provides cold-pressed juices, superfood smoothies, acai bowls and artisan toasts — is planning to open next to Pure Barre in September at 5275 University Parkway, Suite 130.

Other restaurants under construction at UTC are Tampa-based concepts Olivia and On Swann and Nashville-headquartered Bricktops, which are all targeting 2027 openings.
